Heritage birds have a more athletic build -- longer legs and slightly smaller breasts -- compared to the "double-breasted" industrial hybrids that are bred to be stationary.

For holiday gatherings, customers should aim for 1.5 to 2 lbs per person (compared to the standard 1 lb per person for supermarket birds).
